Liver-Cleansing Arugula + Avocado Salad With Citrus Flax Vinaigrette

Ingredients:

  • 5-6 cups washed and dried arugula
  • 2 grapefruits
  • 1 avocado
  • ½ cup raw walnuts, chopped
  • 1 tsp lemon juice
  • 1 tsp raw honey
  • 1 tsp apple cider vinegar
  • 2 tsp unrefined flax oil
  • 2 tsp extra virgin olive oil
  • 1 garlic clove, crushed or minced
  • sea salt and freshly ground pepper

Preparation:

  1. Peel one of the grapefruits and separate the slices. Remove the skin with a sharp knife. Cut the other grapefruit in half and squeeze the juice into a small container with a lid. Cut the avocado in half and cut it into thin slices.
  2. Put the salad ingredients into two plates: arugula, avocado, grapefruit slices and walnuts.
  3. Prepare the vinaigrette: combine the lemon juice, honey, flax oil, vinegar, olive oil and garlic with the grapefruit juice. Cover, and shake energetically. Season with salt and pepper.
  4. Pour the dressing over the salads. It is ready for serving.
