The chemical called eritrozin B is usually used in the production of various sweets such as candies and gels for cake decorations. However, it was recently discovered that this substance is used in the processing of fruits and vegetables in order to make them look fresh.

In 1990, The American Food Society partially banned the usage of eritrozin because many researches showed that the excessive consumption of it can lead to cancer.

On the other hand, various toxicological studies claim that this chemical is not genotoxical.
