Ingredients:

  • 1 bottle of carbonated water ( soda) -this is optional
  • 1 lb ( 16ounces) of fresh cherries
  • ½ pint of water
  • 2 tablespoon raw honey
  • 1 tablespoon lemon extract ( optional)

Instructions:

Take a saucepan and mix the seedless cherries and raw honey in it. If you want it to be sweeter, feel free to add more honey.  Simmer until you reach the desired consistency. Finally, mash the cherries for its extract.  Leave it like that at room temperature for at least 2 hours. Don’t forget to put a cover.  Add the ½ pint of water while stirring. You need to incorporate all the ingredients well. Then, bring to boil and try to maintain a light bubble in the meantime. Stir from time to time, until you get an almost syrupy mixture. In the end, squeeze and strain the mixture and store in a clean jar.

Serving:

Serve the tart cherry juice in the following way:

  • Add 12 tablespoons of the extract in a glass of water/ carbonated water soda
  • Add lemon extract ( optional)
  • Put some mint leaves and ice for garnish
